ベリーやイチゴに清涼感のあるハーブを感じる香り。
乳酸系のクリーミーでまろやかな香りにバニラ。
繊細でカチッとしたタンニンとベリーやまろやかな乳酸のような酸がチャーミングな印象です。
後味も複数のハーブやスパイスをほんのりと感じられ爽やかな余韻の赤ワインです。
Il Cavallino/イル カヴァリーノ
当主: サウロ・マウレ
Il Cavallino は、ラ・ビアンカーラのアンジョリーノ・マウレが育てた新たな弟子によるワイナリーです。
サウロの父はもともと牛の肥育業を営んでおり、アンジョリーノとは旧知の仲。
父から聞いた**「自然と調和した農業」や「人為的介入を極限まで排した醸造哲学」**に深く共感し、サウロはワイン造りの道へ進むことを決意しました。
家族が所有していたブドウ畑を引き継ぎ、ワイナリーをスタート。
現在は、ガンベッラーラに隣接するモンテベッロ・ヴィチェンティーノで**白ワイン用のブドウ（ガルガーネガ、ソーヴィニョン、ドゥレッラ、ピノ・グリージョ）**を栽培。
また、コッリ・ベーリチでは、ダニエーレ・ポルティナーリとともに、**赤ワイン用のブドウ（メルロー、カベルネ・ソーヴィニョン、タイ・ロッソ）**を栽培しています。
畑とセラーでの作業は、師であるアンジョリーノの哲学を継承。
ボルドー液以外の農薬は一切使用せず、酸化防止剤の添加も極限まで少なくするか完全無添加でボトリングを行う、徹底した自然派ワイン造りを実践しています。

Tasting Notes (2018 Vintage)
A slightly cloudy ruby-red hue.
The nose reveals aromas of berries and strawberries, complemented by a refreshing herbal character.
Hints of creamy lactic notes and vanilla add depth and complexity.
On the palate, the wine displays delicate yet structured tannins, with a harmonious balance of berry fruit flavors and soft, lactic-like acidity.
The finish lingers with subtle herbal and spicy notes, leaving a fresh and vibrant aftertaste.
About the Winery: Il Cavallino
Winemaker: Sauro Maule
Il Cavallino is a winery founded by Sauro Maule, a disciple of Angiolino Maule of La Biancara, one of the pioneers of natural winemaking in Italy.
Sauro’s father, who was involved in cattle farming, was a longtime friend of Angiolino.
When Sauro first learned about natural farming methods and low-intervention winemaking from his father, he was deeply inspired and felt an immediate connection to this philosophy.
This passion led him to take over his family’s vineyards and establish Il Cavallino.
Currently, he cultivates:
- White wine grapes (Garganega, Sauvignon, Durella, Pinot Grigio) in Montebello Vicentino, near Gambellara.
- Red wine grapes (Merlot, Cabernet Sauvignon, Tai Rosso) in Colli Berici, alongside Daniele Portinari.
Following the philosophy of his mentor, Sauro practices organic and natural winemaking:
- No synthetic chemicals or herbicides are used, except for Bordeaux mixture.
- Minimal or zero sulfur additions during bottling.
By embracing a traditional, minimal-intervention approach, Sauro continues to craft wines that truly express the land and its natural identity.
